Hotdog with homemade curried tomato sauce

Ingredients

  • Rolls:
  • 2 packs Bratwurst
    4 white crusty rolls
    1 head of lettuce
    1 spring onion, sliced finely

Salsa:

  • 1 cucumber, diced finely
    1 onion, diced finely
    1 clove garlic, chopped finely
    1 red chili, chopped finely
    bunch fresh parsley, chopped
    2 tbs olive oil
    salt and pepper

 

Sauce:

  • 1 onion, chopped finely
    1 apple, diced finely
    2 tbs curry masala powder
    1 can diced tomatoes
    2 tbs Dutch ‘appelstroop’ or thickened dark apple syrup
    40 g palm sugar
    splash red wine vinegar
    oil for frying
    salt and pepper

 

Preparation

For the salsa, combine cucumber, onion, garlic, chili and parsley with the 2 tbs olive oil. Season with salt and pepper.

Sauté onion and apple, and add curry powder during the final minute. Add the canned tomatoes and bring the sauce to a boil. Add apple syrup, palm sugar and vinegar and wait for the sauce to thicken. Season to taste with salt and pepper. Process in a blender until the sauce is velvety and pour into a bottle or jar.

Cook the Bratwurst on a hot grill until browned and grill lines have formed on all sides. Wash (and dry) the lettuce leaves. Cut the rolls and ladle a spoonful of sauce on the bottom half. Add lettuce leaves and top with a Bratwurst. Top with cucumber salsa and more curried tomato sauce. Garnish with the spring onion.
